Juniper Takes Over Kitchen At The Open House

All you crazy party people will know Oliver Hyde as general manager of hip seafront club Audio. What you may not know, however, is that the rather energetic gentleman also has a parallel and highly successful career in catering, with a CV that features such prestigious local eateries as The Saint, One Paston Place, Terre A Terre and the Seven Dials Restaurant.
Now his company, Juniper, have taken over the kitchen at one of the city’s most attractive popular pubs, The Open House on Springfield Road.
“Our aim is to improve speed of service and to offer real value for money, so we’ve kept our prices as low as possible without compromising quality,” explains Ollie. “We also want to ensure that, no matter how high the demand, we maintain consistency of standards – and, of course, that we are sufficiently well-prepared that we don’t run out of any dishes.”
Boasting “a healthy obsession for real food that tastes delicious”, Juniper make a point of stating that every dish on the menu is made by hand. They use the best fresh meat, fish and vegetables from local producers and suppliers, with the burger buns, for instance, exclusively custom-made by the acclaimed Real Patisserie on Trafalgar Street.
Main meals on offer range from Thai squid salad (£5.95) to navarin of lamb (£8.50), via Asian pancakes (£6.95) and best beef burger (£7.25). There are also fresh baguettes and several snacks and side dishes, as well as desserts and kids’ meals.
Juniper also operates an innovative scheme whereby specialist chefs (from pastry to sushi) visit every fortnight to teach a master class to the regular staff. That dish is then served as a special for the following week, ensuring that the menu stays constantly fresh.
The new menu is served 12-9pm, Monday to Saturday, while on Sundays Juniper will be offering up their mighty Sunday Roast. They will also now be doing catering for The Open House’s upstairs function room, which is available for private hire.
